Ingredients:

For the Buttermilk Biscuits:

  • 2 cups unbleached all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon salt

  • 1 tablespoon sugar

  • 1/2 cup unsalted butter, cold and cubed

  • 3/4 cup buttermilk, cold

For the Fried Boneless Skinless Chicken:

  • 4 boneless, skinless chicken breasts or thighs

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • 1 teaspoon g-way paprika

  • 1 teaspoon g-way garlic powder

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • Olive oil, for frying

For the Hand-Cut Fries:

  • 4 large russet potatoes

  • olive oil

  • Salt, to taste

Instructions:

Step 1: Prepare the Buttermilk Biscuits

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.

  3. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

  4. Pour in the cold buttermilk and stir until just combined. Do not overmix.

  5. Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a rectangle about 1-inch thick.

  6. Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet.

  7. Bake for 12-15 minutes, or until the biscuits are golden brown.

  8. Serve warm with butter, honey, or jam.


Step 2: Prepare the Fried Boneless Skinless Chicken

  1. Place the chicken in a bowl and pour the buttermilk over it. Let it marinate for at least 30 minutes, or up to overnight in the refrigerator.

  2. In a shallow dish, combine the flour, paprika, garlic powder, salt, and pepper.

  3. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until hot.

  4. Remove the chicken from the buttermilk, letting the excess drip off, and dredge each piece in the seasoned flour, coating it completely.

  5. Carefully place the chicken in the hot oil and fry for 6-8 minutes per side, or until golden brown and cooked through.

  6. Remove the chicken from the skillet and place on a paper towel-lined plate to drain excess oil.

  7. Serve hot.




Step 3: Prepare the Hand-Cut Fries

  1. Preheat your oil to 425°F Line a baking sheet with parchment paper.

  2. Wash and peel the potatoes. Cut them into thin strips about 1/4-inch thick.

  3. Place the potato strips in a large bowl and cover them with cold water. Let them soak for at least 30 minutes to remove excess starch.

  4. Drain the potatoes and pat them dry with a clean towel.

  5. add to preheated oil

  6. Cook to crispy and the fries are golden

  7. Remove from the oven and sprinkle with salt to taste.

  8. Serve immediately.
